Enrico Bartolini signs the Theater La Scala opening dinner

Giacomo Puccini’s Tosca will be opening this year the La Scala Theater season. And as a last act the gala dinner for five hundred guests will be signed by the chef Enrico Bartolini at the Società del Giardino.

As a tribute to the composer, with whom the chef shares his Tuscan origins, Bartolini – who has recently conquered the three Michelin stars in Milan – will prepare a menu that blends tradition and modernity, interpreting ancient flavors and local ingredients with the refined contemporary vision that characterizes his kitchen. “I am honored – commented Enrico Bartolini – to have been chosen by Caffè Scala for the realization of this dinner which is an extraordinary event for Milan. With Salvatore Quartulli, the soul of Caffè Scala, we studied a menu that could express the essence of our great Italian cuisine, interpreting ingredients and dishes from Lombardy and Tuscany in a modern harmony of flavors. ”

The menu will open with an appetizer that honors the Tuscan tradition: black cabbage and pigeon soup (one of the most prized meat and much appreciated by the aristocracy of the time), and Ceci, cuttlefish and cacciucco, a great classic of Livorno cuisine. The first course is an “icon dish” of the chef: Red turnip risotto and gorgonzola sauce that Bartolini has for the occasion “renamed” Tribute to Cavaradossi, the male protagonist of the Puccini opera in love with Tosca; the second dish, Tenerezza di Vitello, revisits a “classic” dish with turmeric, and will be accompanied by a mushroom and potato millefoglie. And as a dessert, Zabaione: one of the most classic desserts of the Italian tradition, currently served with the Mediterranean scents of the peninsula and served on an orange and dark chocolate tree.
