FROM MOUNTAIN TO SEA: TOSCA WELCOMES TWO MICHELIN STAR CHEF ALFIO GHEZZI  

From November 5 to 6, The Ritz-Carlton, Hong Kong’s Michelin-starred Italian restaurant Tosca will host guest chef Alfio Ghezzi. Chef Alfio who has garnered two Michelin stars for restaurant Locanda Margon will join hands with Tosca’s Chef de Cuisine- Nicola Russo to bring out the best of Italian cuisine.

Born in Trentino, Chef Alfio is known for his passion for local ingredients while Chef Nicola also finds inspirations from his family roots in Pisa. The duo curates a delectable gourmet experience which takes you on a journey exploring authentic flavors from both the Mediterranean shores and the Alpine mountains. 

Embark on the culinary adventure with Chef Alfio’s signature appetizer Salmerino Alpino. The dish featuring Arctic char- an indigenous species of Trentino which possesses a delicate, clean and elegant flavor is quite the glacial relic in a plate. The fish is steamed to perfection and served with hollandaise sauce and purple cabbage powder. 

Savor the delicate taste of Faraona as Chef Alfio elevates the traditional Guinea fowl dish to a fine dining level. The elegantly executed chicken roulade served with wild mushroom extract and kale leaves, flaunts the natural wild tastes of the Guinea fowl.

To echo the theme, Chef Nicola also shines spotlight on the authentic Italian cuisine. The UOVO 64 for example, serves the roasted pork belly- crispy on the outside and juicy on the inside with a runny organic egg and Alba truffle. The main course Rombo also highlights the turbot fish paired with artichoke and potato. 

Then, your sweet tooth is delighted with the Zucca & Mandorla which features the seasonal butternut squash as a base, matched with almond and refreshing pear puree.
