Eggettes, whatelse?

Walking along the streets, you can see a lot of street food choices. One of this is named Eggettes (egg waffles) or gai daan zai. While you can never go wrong with the classic style, local food stalls have continuously rolled out new and unconventional combos to keep things fresh and original. From one based on the current craze for salted egg to an Instagrammable star patterned variety,  and with dark chocolate, banana, meat floss and crabstickyou can look around and taste the most popular eggettes of the moment in town.

The recipe is very simple: flour, baking powder, custard powder, eggs, evaporated milk, and a pinch of sugar, plus whatever secret ingredient the vendor decides to use, is poured into a heated dimpled iron, creating balls of doughy heaven.
